Maillard reaction and Brown reaction were strengthened in the boiling, melanoidin and melanoid compound contents increased, wort chromaticity improved, and the oxidation resistance of wort strengthened. Besides, the boiling intensity dropped from 9 %～12 % to 7 %～8 % and boiling time shortened to 10～20 min, which improved production efficiency and saved 20 % energy and improved beer non-biological stability.

结果表明：超高压处理可以有效地杀灭南美白对虾中绝大多数微生物，抑制贮藏过程中挥发性盐基氮的积累，延缓pH值的变化，从而延长南美白对虾的货架期，且处理压力越高延长效果越显著；超高压处理会给鲜虾带来不同程度上的煮熟虾的风味；400 MPa和600 MPa处理使虾在冷藏过程的黑变提前，而700 MPa处理可以完全抑制南美白对虾黑变现象的发生；超高压能够改变腺苷三磷酸及其代谢产物的代谢情况，但不影响腺苷酸的代谢途径。

RESULTS: In this series, 6 cases showed hematemesis, 2 showed melena and 5 showed both symptoms. All cases underwent endoscopic examination after being hospitalized; 11 cases received a positive diagnosis by endoscopy (11/13, 85%), the success rate of first endoscopic therapy was 91%(10/11), and 4 cases were treated by laparotomic surgery (4/13, 31%). Among them, definitive surgery was performed under the guidance of endoscopic hemoclipping in 2 patients who failed to be treated by endoscopy. In another 2 cases, diagnosis was missed by endoscopy and definite diagnosis was made only following exploratory operation or on the basis of pathology after the operation.
