In order to investigate the quality of wheat in Huanghuai southern regions, 36 wheat cultivars were fractionated by SDS-PAGE to determine their HMW-GS composition, the variation of the subunits from different allelomorphic genes and the frequency were also analyzed.

Our study is adopting the method of physical and chemical, with the flour of glutinous wheat line, glutinous wheat 7385, and common winter wheat variety, physical parameter for viscoelasticity, glutenin, starch content, and other compositions have been determined in the present research.
