Different additives for controlling acid value and oxidation in Chinese Cantonese Sausage were studied in this paper.

通过对不同处理的广式腊肠在37℃贮藏条件下酸价、过氧化值、TBA值变化趋势的分析，研究了不同添加物对广武腊肠酸价抑制和抗氧化效果。

In order to meet the needs of the practical industry, the property of ammonium phosphate and the effect of sodium humate on the habitude of slurry was investigated firstly by experiments:the relation between neutralization value of the slurry and the pH value, the relation between the boiling point and the density, water content and viscosity of slurry;the influence of sodium humate added into slurry on the relation between the neutralizing value and pH value, and on the density, water content and viscosity of the slurry.

Results showed that: the AV and PV increased with the electric field strength, but no significant changes of CGV were observed after PEF treatments. During the storage period oil auto-oxidation occurred, its AV、PV and CGV increased gradually. Meanwhile PEF treatments could effectively reduce the oxidation speed.

结果表明：强脉冲电场处理后，花生油的酸价及过氧化值随电场强度的增加而增大，羰基价无明显变化；在贮藏期油样发生氧化酸败，各值随贮藏时间的延长而不断增加，PEF处理有效降低了其氧化速率。

The results show that bioleached sludge at pH 3.5～1.95 can be used successfully as inoculums for the next batch bioleaching trial with the similar bioleaching efficiency,by which pH of the treated sludge can be reduced to less than 2 within 5 days for hydraulic residence time of bioleaching.
