Category: C Type: Firm/Hard Milk: Cow Origin: Italy POD. Named after a small town in Cuneo in the Piedmont region. Produced primarily by small-and medium- sized dairy farms of the plain of Cuneo and villages of the valley floor. Pressed, partially skim milk, 16-pound wheel. Rind is dark and paste orange-yellow. Cows that produced the milk must be fed exclusively on green grass-no silage or feed allowed. Excellent table cheese. Three varieties: soft, hardand summer-only alpine. Small amounts of sheep and /or goat milk allowed.
