AIM: To explore the effect of anthocyanin on cholesterol efflux and elucidate its possible molecular mechanism.

目的：研究植物化学物质花青素对小鼠巨噬泡沫细胞胆固醇外流的影响，探讨花青素促进巨噬泡沫细胞胆固醇外流的分子机制。

The anthocyanin HPLC fingerprint of wines from the grape varieties, the fingerprint of anthocyanin HPLC and volatility component GC-MS of the wine vintages, the fingerprint of the infrared spectrum and multivariate parameter of the wine production regions were established in this dissertation. wine Fingerprints were analyzed by using identification pattern methods, and the internal regular rule and crytic character of wine fingerprint were explained,identification pattern and methodology system of the main aspects of wine quality were established in this dissertation.

本文建立了不同酿造品种葡萄酒HPLC花青素指纹图谱、不同酒龄葡萄酒HPLC花青素指纹图谱和GC–MS挥发性成分指纹图谱、不同产地葡萄酒红外光谱指纹图谱和多元参数指纹图谱，应用相似度分析、主成分分析和聚类分析识别方法，对本文所建立的指纹图谱进行了分析，揭示了指纹图谱的内部规律和隐含性质，建立了适合的识别模式及葡萄酒质量指纹图谱检测体系。

用分光光度法对紫叶稠李叶片不同部位的花青素和叶绿素进行了测定，结果表明，随着时间的变化，不同部位叶片的花青素均呈现低-高-低的变化趋势，经方差分析，差异性不显著，说明紫叶稠李叶片花青素含量跟着生的部位关系不明显；同一部位的花青素含量远远大于叶绿素含量，这也是紫叶稠李叶片在整个生长季呈现紫红色的原因。

中国越橘富含花青素，越橘花青素重的色素物质，主要为花青素-2-葡萄糖苷、花青素-3-木糖苷、花青素-3-半乳糖苷、花青素-2-鼠李糖苷、翠雀花-3-鼠李糖苷、翠雀花-5-葡萄糖苷、3-O-酰原花翠素、锦葵色素-3，5-二糖甙和3，3-二-酰原花萃素等。

As shown in previous studies Hibiscus sabdariffa L. is a nature plant containing a lot of pigments that was found to possess antioxidative activity.In this study, we evaluated the antioxidative activity of the Hibiscus anthocyanins by measuring their effects on LDL oxidation and anti-atherosclerotic abilities.

本实验以乾燥洛神花为材料，以调酸的甲醇溶剂萃取其花青素，发现甲醇萃取率为5％；纯度测定约有85~95％，另以HPLC分析后发现其花青素主要分为两类，推测分别为delphinidin系及cyanidin系，其花青素含量分别为3.7％及0.9％。

It was investigated how to increase the yield and purity of tannin, flavone and oligoprocyanidms from the root and stalk of sanguisorba, and the stability of polyphenols from sanguisorba was studied, too. The chemical constitutes of sanguisorba were analyzed, the conditions on extracting tannin, flavone and oligoprocyanidins from sanguisorba by general lixiviating process and ultrasonic wave were optimize. The flavone and oligoprocyanidins were separated from sanguisorba and purified. The stability of polyphenol from sanguisorba was studied and the chemical structure of the products was analyzed.

本论文以地榆根茎为原料，对如何提高其主要活性成分鞣质、黄酮类物质以及低聚原花青素得率和纯度以及地榆多酚的稳定性进行了探讨；主要分析了地榆中化学成分，常规浸提和超声波浸提对地榆根茎中鞣质、黄酮类以及低聚原花青素提取条件的优化，地榆根中黄酮类和低聚原花青素的分离纯化，地榆多酚稳定性能以及产品的初步化学结构分析。
