The effects of concentration, temperatrue, rotation rate, pH and salt on the paste property of the colocasia esculenta schott starch were studied. The clarity freeze-thaw, retrogradation and anti-mycotic characteristics were determinated.

研究了糊浓度、温度、回转速度、pH和盐等因素对香芋淀粉糊粘度的影响，测定了香芋淀粉糊的透光率、冻融性、凝沉性和抗霉菌能力等性质。

结果表明，与原淀粉相比，香芋淀粉磷酸酯更容易糊化、透明度高、沉降稳定性好、冻融稳定性和抗霉菌能力有所改善、糊粘度减小。

There were 2 peaks of starch accumulation in the process of somatic embryogenesis,the first time was at the stage of embryogenic callus,the second time was at the stage of globular embryoids;and a small raise appeared at the stage of torpedo-shaped embryoids,and the content of starch was slightly higher than those of heart-shaped embryoids and cotyledonary embryoids.With the development of embryos,the tendency of the changes of the content of DNA,RNA and the total nucleic acids was approximately similar,and the peak values were all at the stage of cotyledonary embryoids,and the change of the content of RNA was more remarkable than those of DNA and the total nucleic acids.The tendency of change of the content of proteins almost took on the S-shaped curve.

结果表明：龙眼胚性愈伤组织体胚发生过程中淀粉有2个累积峰值，第1次出现在胚性愈伤组织阶段，第2次出现在球形胚阶段，在鱼雷形胚阶段又有一个小回升，这时淀粉积累较心形胚和子叶形胚阶段高一些；随着胚胎的发育，DNA、RNA、总核酸含量的变化趋势大致相同，最高点均出现在心形胚阶段，其中RNA含量的变化较DNA、总核酸含量明显，蛋白质含量的变化曲线呈&S&形。

These indicted that the low temperature in autumn and short sunshine could promote the synthesis of the leaf protein,degrade the buildup of starch and invert part of starch to glucose,thus the PAL enzymatic activity were increased and the synthesis of cyanin was promoted,the leaf color changed red.

这说明秋季低温和短日照促进叶片蛋白质的合成，降低淀粉积累，将部分淀粉转化为葡萄糖，PAL酶活性增加，从而促进花色素苷的合成，叶色转为红色。
