Then size properties and crystal characteristics of lily starch granules were observed with combination of photomicroscope, scanning electronic microscope , polaried light microscope and X-ray diffraction. Compared with potato starch and cornstarch, solubility, swelling power and freeze-thawing properties of lily starch were measured by centrifugal method; its thermal, rheological and mechanical properties were systematically investigated by DSC, Rheometer and Texture Analyser, respectively.
