The results showed that by using ethanol-alkali method to prepare cold-water-soluble starch, the impact of ethanol concentration and reaction time on the solubility of wheat granular cold-water-soluble starch was significant; the appropriate preparation conditions for wheat cold-water-soluble starch was on the reaction temperature of 65℃, ethanol concentration of 80 mL/l00 ml, reaction time of 80 min, alkali concentration of 10 g/100 ml, under this condition the solubility of the product was up to 81.44%.
