The study was conducted to investigate the effects of heat treatment on flesh leatheriness of cold-stored loquat fruits and the possible mechanisms. Freshly harvested loquat fruits were pre-treated with hot air at 38℃ for five hours and then stored at (1±1)℃ for 35 days. Fruits firmness, extractable juice rate, the activities of phenylalanine ammonium-lyase, peroxidase, polyphenol oxidase and polygalacturonase that were related to flesh leatheriness, and contents of lignin and pectin were analyzed at seven-day intervals during storage.

Surface waxes of the pericarp were observed by scanning electron microscopy; the structure and composition of cell wall were studied using light microscopy, transmission electron microscopy and Fourier transform infrared microspectroscopy respectively; the changes of calcium in the cell wall were determined by atomic absorption and the integrity of cell membrane by conductivity meter respectively.

Results showed that contents of IAA and ABA in peduncle, bourse and the tissues around abscission zone among several cultivars were very different, but their trend of change was similar, IAA content decreased and ABA content increased toward harvest time for all the cultivars. Ethylene evolution in fruit of the cultivars with higher preharvest drop was evidently higher than the cultivars with less preharvest drop. Cellulase activity in the tissues around abscission zone of the cultixars with higher prehanest drop rapidly increased toward harvest time.
