The major grape varieties for ice-wine: Vidal, Riesling, Gewurztraminer, Chardonnay, Merlot, Scheurebe, Muskateller, Muller-Thurgau, Ortega, Pinot Blanc Pinot Gris,etc. Among them, Riesling is called the Queen of Ice wine for it is the most elegant grape variety in Germany and it has much higher natural acidity. Riesling needs a long time to go before forming its elegant favor, and maintain a high acidity which would well balance the sweetness in ice wine.
