Using peptide hydrolysis combined with amino acid analysis, sugar alcohol acetylation combining with GC/MS, fattic acid methyl esterization combining with GC/MS and other technical means it was identify carbohydrate in the bioemulsifier mainly was D-mannose, and main amino acids were glutamic acid, aspartic acid, alanine, and main fattic acids that composed lipid was hexadecanoic acid, octadecenoic acid, and octadecanoic acid.

利用肽水解结合氨基酸分析、糖醇乙酰化结合GC-MS、脂肪酸甲脂化结合GC-MS等技术手段鉴定乳化剂中糖主要为D-甘露糖；主要氨基酸为谷氨酸、天冬氨酸、丙氨酸；构成脂的主要脂肪酸为十六烷酸、十八烯酸和十八烷酸。

Supercritical fluid extraction technique was used to extract orris oil from the orris and,then,the chemical composition of the product extracted from the orris by means of GC-MC was analyzed.

SM6 and SM7 of uncrystal were analyzed through GC-MS, the results showedthat SM6 main contained unsaturated fatty aldehyde with fragrance, i.e.-2,4-decadienal(58%), tetradecanoic acid (55.78%), 2-decenal(50%), Phthalic acid isobutylundecyl ester(47%), 2, 4-Decadienal(41%), 2-Undecenal (31%), 2-Methyl-Z,Z-3, 13-octadecadi-enol(18.84%), and SM7 contained saturation alkanes, i.e. 1, 2-Benzenedicarboxylic acid, butyl cyclohexyl ester(23.90%), Triacontane(22.63%),Nonacosane(21.04%), Heptadecane(18.84%), Octacosane(13.58%). Toxicological experiments were done to insure the pigment safety.

并对紫红丝膜菌色素非晶体部分的黄色油状物SM6和紫色粉末物SM7作了GC-MS分析，结果显示SM6中主要为具有香气成分的不饱和脂肪醛，其中含量较高的依次为：-2，4-癸二烯醛(58％)、十四烷酸(55.78％)、2-癸烯醛(50％)、邻苯二甲酸异丁基十一烷酯(47％)、2，4-癸二烯(41％)、2-十一碳烯醛(31％)、2-甲基-Z，Z-3，13-十八碳二烯酸(18.45％)等；SM7中主要为饱和直链烷烃，其中含量较高的依次为：1，2-苯二羧酸丁基环己酯(23.90％)、三十烷(22.63％)、二十九烷(21.04％)、十七烷(18.84％)、二十八烷(13.58％)。

The nautre of ester bond and sedimentary medium condition control the distribution pattern of organic acid ester in strong reductional environment and water-washed oxidized crude oils. The former features higher contents both of 9, 11-Octadecadienoic acid, methyl ester and Hexadecanoic acid, showing the non-reversible hydrolysis reaction of ester bond in condition of basicity; the later features higher contents of Hexadecanoic acid and Octadeanoic acid, and lower contents of nonsaturated and side-chain acid ester, indicating the reversible hydrolysis reaction of ester bond in acid condition.

酯键的化学性质和沉积环境中介质条件，决定了强还原咸水盐湖相和淡水湖沼相经水洗氧化次生变化的原油有机酸酯的分布特征，前者9，11-十八二烯酸甲酯与正十六烷酸为主，反映酯键在碱性条件的不可逆水解过程，后者以正十六烷酸和正十八烷酸为主，烯酸和支链酸很少，反映酯键的酸性条件的可逆性水解，烯酸经氧化向正十八烷酸，正十六烷酸转化。

Result 16 kinds of fatty acids were separated from Anak chicken muscle and identified. Among them, 7 kinds fatty acids, including lauric acid, myristic acid, pen-tadecanoic acid, palmitic acid, margaric acid, stearic acid and eicosanoic acid, were saturated fatty acids and its content accounted for 38.55% of the total fatty acids; 9 kinds fatty acids, including 11-teteadecenoic acid, 9-hexadecenoic acid, 9-vaccenic acid, 9,12-octadecadienoic acid, 6,9,12-octadeca-trienoic acid, 11-eicosenoic acid, 10, l3-eicosenoic acid, 7,10, 13-eicosatriennoic acid and 5,8,11,14-arachidonic acid, were unsaturated fatty acids, and its content accounted for 61.45% of the total fatty acids.

结果］安卡鸡肌肉中共分离和鉴定出16种脂肪酸，其中饱和脂肪酸7种，包括月桂酸、豆蔻酸、十五烷酸、棕榈酸、十七烷酸、硬脂酸和花生酸，其含量占总脂肪酸的38.55%；不饱和脂肪酸9种，包括11-十四碳烯酸、9-十六碳烯酸、9-十八碳烯酸、9，12-十八碳二烯酸、6，9，12-十八碳三烯酸、11-二十碳烯酸、10，13-二十碳二烯酸、7，10，13-二十碳三烯酸以及5，8，11，14-二十碳四烯酸，共含量占总脂肪酸的61.45%。

Results13 compounds were identified, which accounted for 100 % of the essential oil of the skins of stem. The major compositions were n-Hexadecanoic acid (46.13%); Octadecanoic acid (15.44%),-9-Octadecenoic acid (13.73%), and-9,12-Octadecadienoic acid (7.79%).
