Determined and draw the absorption curve of reagent in varies acidity, and figured out the dissociation constant by Perisic-Janjic method; the complex ratio of the reagent and bismuth was determinated by mole ratio method and continuous variation method; The apparent stability constant of the complex was calculated, the mechanism of dissociation and coordination were discussed.

以成熟的龙葵果为原料提取食用红色素，通过优化工艺、确定单因素条件、设计正交试验，以527nm波长的吸光度值衡量色素提取效果和稳定性；最优化的提取条件为：柠檬酸水溶液提取剂pH为1.72，样品加量3.35g/100mL，提取温度60℃，浸提时间60min；龙葵红色素提取液长期接触光、空气和Fe3+，稳定性下降，因此，在提取、干燥和储存时要尽量避免长时间接触光和空气、避免与铁制容器直接接触。
