Mesoporous zincum sulfide is synthesized by room-temperature method and hydrothermal technique, employing the surfactant cetyltrimethyl ammonium bromide, duodecimal alkyl sulfonic natrium and lauryl amine as templates. The physicochemical properties, fatty acid composition and mineral elements of Viburnum cylindricum seed oil were determined. 结果表明：军曹鱼鱼肉粗鱼油和精制鱼油脂肪酸组成没有明显变化，主要由C14～C22的18种脂肪酸组成，不饱和脂肪酸含量分别为44.31%、48.53%；二十碳五稀酸和二十二碳六稀酸总量分别为13.67%、14.88%；酶解蛋白粉粗蛋白含量为95.77%，脂肪含量0.32%，灰分5.45%，具有高蛋白、低脂肪、矿物元素丰富的特点；必需氨基酸占氨基酸总量的41.58%，必需氨基酸之间比例适宜，符合FAO/WHO推荐的理想蛋白质模式。
