Spraying with chitosan of different concentration significantly increased the content of chlorophyll ,anthoxanthin ,chlorogentic acid, polyphenal ,soluble protein and total soluble sugar of Broccoli flowers. 40 mg L-l chitosan showed the most remarkable effet,compared to control, the content of chlorophyll ,anthoxanthin ,chlorogentic acid, total soluble sugar and soluble protein of treated Broccoli flowers increased by 64.4%,282.5%,35.6%,16.2% 22.7% respectively.PAL and PPO are key enzymes in synthesize of phenolics.No relation was found between phenolics synthesize and PAL activity in Broccoli flowers,but it showed positive relation between phenolics synthesize and PPO activity.

And gallic acid, ellagic acid were the main phenolic compounds in Canarium album Raeusch, their relative content were 38.8% and 14.3%, respectively.

The Schiff base transitional metal complexes of various structures and their metallomicelles as peroxidase models for the phenol and phenolic derivant oxidation have been investigated. Some results are obtained from the studies:(1) the Schiff base transitional metal complexes have high catalytic activity for the phenol and phenolic derivant oxidation, and the structure of the complexes has a great effect on its catalytic activity;(2)a novel kinetic mathematical model for the complexes and their metallomicelles catalyzing the phenolic derivant oxidation has been established;(3) the feasibility and mechanism for the phenolic derivant oxidation catalyzed by the metallomicelle(as the mimetic model of peroxidase)have been discussed.

Gas chromatography and mass spectrometry technique were employed to analyze the ginger oleoresin. This analysis resulted in the detection of 3 hitherto unknown natural compounds, 24 compounds previously reported as pungent compounds and 50 volatile compounds from ginger. The volatile compounds were mainly α-zingiberene (22.29%),β-sesquiphellandrene (8.58%),α-farnesene (3.93%),β-bisabolene (3.87%),α-curcumene (2.63%), which were mostly consisted of sesquiterpene hydrocarbons.
