The manipulation of sugar can divide the curve of pink wine alcohol fermentation density with the changes of time into two parts when the sugar content of raw material-grape is lower than 12%. The regression analysis results showed that quadrative equation and logarithmic equation can be used to describe changes of density with changes of time before and after replenishing sugar respectively.

PCR-SSCP (single-strand conformation polymorphism) was used for studying the community changes of pronucleus microorganisms in various fermenting stages of Luzhou-flavor Daqu. The results showed:(1) The pronucleus microorganism's community was similar and also had the polymorphism in each simple of various fermentation stage;(2) Different microflora had complex ecology effects of coordination and the restriction;(3) The diversity indexes of different stage of Daqu microorganisms were around 1.69~2.01, and the composition of them was stable relatively;(4) The similarity indexes were 0.67~1.00, and much higher in the approaching stages.

To investigate the mechanisms of biohydrogen production by anerobic fermentation of solid organic waste, gas chromatography is used to analysis the biogas and volatile fatty acid in anaerobic bio-reactor. Firstly, the ability of hydrogen production by digested sludge from the West Lake, Enteobacter aerogences, digested sludge from sewage farm, the fluid of methane pool and dejecta have been studied. The rule of the ability of hydrogen production by different bacteria under different control condition. Simultaneity, the importance of the synergistic effect on hydrogen production has been proved.
