objective the effects of anthocyanin pigment from maize purple plant on resisting lipid peroxidation were investigated.methods the inhibition of anthocanin pigment from maize purple plant was examined in vitro that autcoxudation of lecithin liposome system induced by fe2+.50 mice were randomly divided into 5 groups.vehicle and different dose anthocyanin pigment from maize purple plant were given respectively,and then experimental injury of mice liver was induced to make use of bromobenzene and the content of mda was determined in liver homogenate.results the inhibition rates of anthocyanin pigment from maize purple plant on linoleic acid oxidation was higher that of ascorbic ascorbic acids.the content of mda in homogenate in middle and high dose of pigment were significantly lower than that in low dose and the injured control group.there were no significat differences in the content of mda in homogenate between low dose group and injury control group.conclusion the anthocyanin pigment from maize purple plant have the capability to resist lipid peroxide.
目的 探讨玉米紫色植株色素抗脂质过氧化的作用。方法体外实验测定玉米紫色植株花色苷色素在fe2+引发的卵磷脂脂质体体系中抗氧化活性。体内实验,取50只小鼠随机分成5组,分别给予溶媒和不同剂量的色素,然后采用溴代苯致实验性肝损伤,测定肝匀浆的丙二醛含量。结果在由fe2+引发的卵磷脂脂质体体系中玉米紫色植株色素对脂质过氧化有明显的抑制作用,抑制率随样品的浓度增高而增大,并且明显优于抗坏血酸。在溴代苯致小鼠实验性肝损伤模型实验中,中、高剂量组的丙二醛含量均低于损伤模型组。低剂量组和损伤模型组比较丙二醛含量差异无统计学意义。

The results showed:①Anthocyanin content in mature fruits was 132170 U·g-1FW in bud mutation which was very significantly higher than that in'Ralls'(49140 U·g-1FW);②Activities of PAL and UFGT were almost the same between the two materials, but CH I and DFR activitieswere significantly high in bud mutation, which were related to the increase of anthocyanin levels in the mutant;③Bagging treatment inhibited anthocyanin synthesis of bud mutation. But anthocyanin content had significantly increased after removing the bags. Activities of CHI and UFGT increased rap idly and were much higher than those in the control after the bag removal. The increase was consistentwith the imp rovement of anthocyanin levels.
结果显示:①在果实发育期间,芽变果皮的花青苷含量明显高于'国光',尤其是成熟期芽变果皮花青苷含量为132170 U·g-1FW,而'国光'仅为49140 U·g-1FW;②在果实发育期间,两个品种间PAL 和UFGT的酶活性无明显差异,但芽变的CHI和DFR酶活性明显高于'国光',表明芽变花青苷合成能力的提高与CHI和DFR酶活性高有关;③套袋抑制芽变果皮花青苷的合成,但解袋后花青苷的含量极显著升高,解袋后4种酶的变化趋势差异较大, CHI和UFGT活性均迅速升高,明显高于对照,这与解袋后花青苷迅速合成相吻合。

The characteristic of anthocyanin accumulation and related factors on anthocyanin synthesis of three currant varieties fruits were analysed. The results were as follow:Great quantities of anthocyanin were accumulaed in black and red currant fruits during the late stage of development, but white currant fruits synthetized anthocyanin during the early period of development.
以三种穗醋栗为试材,对果实中花青苷积累及其相关因素进行了分析,研究结果如下:黑穗醋栗和红穗醋栗在果实发育后期大量积累花青苷,而白穗醋栗仅在果实发育初期合成花青苷。
